I think we should work on some simplified, more rigorous game.

Take roulette. In a perfect roulette all numbers have equal
probabilities, but the banc pays 36 times the winner, not 37 as it
should taking into account the zero, which allows for casinos' margins
on single-number bets.

Are casinos' results infinitesimally but consistently worse over years
and years than they should on a purely statistical basis? No idea...

Now that I think of it, we could impose a mandatory collection of
statistical data for research purposes on all casinos, I think they
make more than enough money to contribute to the progress of science
in this area. :-)
