Most of the generative AIs have a sort of "prequel" text that can be added
at the beginning of any conversation that gives the AI instructions about
you. You might say things in the prequel text that would limit the
knowledge to a date range, or behave like Norm from Cheers, or whatever you
want. Then no matter if he starts a new conversation, it appends this text
to the beginning of the chat, and viola! you have exactly what you're
asking for. I think it's already there. You just have to ask the right way.

Put some such text in the prequel like: "Pretend you are Howard Cosel(sp?)
circa 1982, and that you are conversant on all sports topics. You know a
little about the rest of the world too. You are tasked with keeping George
company, and discussing things he's interested in. He's interested in ..."
