Read simplistically, the Copernican principle is patently false - we
do not live in a typical region of the universe at all. The typical
region is an intergalactic void, far from any visible matter.

Of course, the anthropic principle (weak or strong matters not here)
explains why we live in a region "packed" with visible matter.

The anthropic principle, and the idea that evolution is the simplest
process for getting complexity from simple, also explains why we live
on a planet bustling with life forms, and why we've had such a lucky
history so far of passing through the "great filters".

Where the Copernican principle is useful is in being able to apply
what we consider to be universal truths of physics (so called "laws")
to all other parts of the universe. It is a reasonable first
assumption, and where we find it doesn't hold, we're more likely to
modify what we consider our laws of phsyics, than to reject the
Copernican principle. It is much more limited than your conception of
it as "we are in no way special and instead represent an average and
unremarkable place within the universe". It is in no way in
contradiction to the Fermi paradox. Life can be incredibly rare in the
universe, but the anthropic principle explains why we're going to find
quite a bit of it right where we live.
