Apple butter is used like butter kinda: you spread it on your bread.  Stewing the apples makes the sugar caramelize, turning it darker than applesauce, and making thick so it can be spread over bread like butter.  Note that an egg cream soda contains no egg and no cream, but it kinda tastes like it does.  OK Ben now you youngsters are going to tell me you have never had an egg cream.  Do not risk dying before you get a chance to taste that delightful drink.
