Hi,
ogni is not old Italian spelling. The Dante's sentence is how we would write it in modern italian. Ogni is an adverb and has just this form (no femminine form) so it is used for both masculine and femmine worrds, and it means literally "each single one" or every. In this case "ogni speranza" means " any and every hope".
Dante finds this sentence engraved on the front of the entrance to Inferno.
The reason why it is on back side of the entering door at the Italian airport could be interpreted, I think,  to mean that if you leave Italy, you loose all your hopes. 
Well, Italy can be both a paradise and a hell at the same time.
