The black 'vein' that is the shrimp digestive tract doesn't contain
anything like human poo. :)
It will be grit or sand grains. If the 'vein' is translucent or
invisible, that means it has been cleaned out, usually by keeping the
shrimps overnight in fresh water.

Indeed insects are eaten in many parts of the world. Fried and dipped
in chocolate, mashed up to make paste then fried into cakes, etc.
